Tuna Cake!


I know I haven't posted a recipe in a while but holy cow was this amazing and delicious!

Need:
1 can of tuna
1/2 cup of bread crumbs (divided)
1 egg
canola oil 

Mix 1/4 cup of bread crumbs, egg and tuna in a large bowl.
Form into patties, then coat in more bread crumbs.
Place in oil on the stove for 3 minutes both sides (or until brown).
Place on paper towels to drain before serving.
Enjoy!

Side note: I have frozen these and came out just as good!

Caramel Centered Brownies!


Easy Peasy... I promise!

You Need:
- 1 Box of Brownie Mix
- 1 Box of Chocolate Covered Caramels
- Small Cupcake Wrappers

1. Follow mixing directions according to Brownie Box as well as preheat directions
2. Place one chocolate covered caramel into each of the small cupcake wrappers
3. Place one dollop of Brownie Mix into each cupcake wrapper
4. Follow baking instructions that are on the Brownie Box

Whole Chicken Recipe (EASY!!)

Need:
- whole chicken - onions - celery - butter - mushrooms - potatoes - salt - pepper - vegetable oil - carrots

Before: Preheat oven to 350 degrees F
Cook time: 20 minutes per pound (ex: 8.5 chicken = 170 min = 2 hours 50 minutes)

Directions:
- Remove bag of gizzards and more from inside the chicken
- Rinse chicken off in a clean empty sink
- Spray Pam onto pan and rack
- Melt 3 tablespoons of butter in a coffee cup, mix 1 tablespoon of onion bits, and salt & pepper (to taste) and coat the chicken with the mixture. Place remaining mixture inside chicken.
- Place chicken on rack (that's in the pan) on its back (breast side up) and place in oven for allotted time
- When there is 90 minutes left (1.5 hours) add the vegetables (see below)
- When timer is up, take out your dinner, cover in tinfoil, and let sit for 30 minutes
- While you're waiting, it's a great time to make the gravy!
- Enjoy!

While its cooking:
- Cut up carrots, potatoes (one for each person eating), celery, mushrooms, onions (one will suffice for 4 people)
- Set the table

Kielbasa and Rise Medley

This dinner was amazing. I made it twice, once by myself and the second time when my friend stayed the night with me!
I bought the kielbasa on sale at Stop & Shop (that place is awesome!) and had no idea how to cook it. Come to find out, my mother puts it in the frying pan, my father boils it and everyone else just puts in the crock pot. Well... not me! I actually found a recipe online that pointed me in a different direction: cook it!
I put it in the oven for 20 minutes under 375 degrees and while that was cooking I boiled water and added the rice medley! In half an hour dinner was done, posed perfectly on the plate and really really delicious! I made it again for my friend and she had no idea that you could make kielbasa in the oven like that so she was amazed at how delicious it came out!
So, you try it and let me know how it came out... I'd love to know!

Sangria

I'm not sure if you're aware, but I enjoy a glass of wine when I can have one! As for tonight, I had a glass of Pinot Noir and I enjoyed it, but what I really would like is a glass of Sangria!

Now, Sangria really isn't a wine by itself, but more like a bunch of wine's combined together! Delicious!

What you need to do is combine a couple of wines in your fridge (best after a party when everyone brings a white or rose wine!), cut up a couple of fruits, and keep it cold!

I've had a few Sangria's, each one as different as the wines that are made in each winery, but I've yet to come across a bad one! I've heard people doing one white to one red, two reds and a white, or a red with a ton of fruit. You really can't make a bad sangria! However, it might be the best idea to not mix wineries. Find a winery that you like (or a label if you don't live near one like I do) and mix theirs. Their wines often mix better together because they're from the same soil, grown by the same person and on and on.

Tuna Fish Wrap

Tuna Fish Wrap:

Makes TWO!


Ingredients:
- Tuna Fish
- Chick Peas
- Fresh Lettuce
- Salsa
- Shredded Cheddar Cheese
- Wrap



Directions:
  • Add Lettuce, Salsa, Shredded Cheese and Chickpeas on to the Wrap. 
  • Then, add the Tuna Fish.... 
  • Roll up your sandwich... 
  • And enjoy!   
 


I made one for dinner and the second one I packed up to eat for lunch tomorrow at work! The best part was that I had the salsa last night to go with my chips, and tomorrow I'm going to have kielbasa with rice, and now a chickpea salad! Yum!

Scrambled Eggs.

So, I'm house-sitting and I havent' a clue as to what to make for dinner. So, I call my mother and she tells me over the phone how to make scrambled eggs! What's better than scrambled eggs for breakfast? And since I'm not the greatest cook, it seems like a great idea!

Need:
2-3 eggs (depending on how hungry you are)
2-3 T of milk
salt
pepper
frying pan
spatula

Directions
- Crack the eggs into the bowl and add the milk, salt and pepper. With a fork stir it all together until it makes a lovely GOOP
- Lightly oil the frying pan, or melt some butter on it so the eggs won't stick to the pan
- Pour onto the frying pan which you have covered and wait a few minutes. Then with the spatula flip the eggs over in random places until they have begun to clump up. When they are cooked all the way through (when you stop seeing yellow goo) they're done! I usually add a tad bit more salt before adding them to my plate, but you can season them to your taste.

Banana Split!


Like, OMG who can imagine a better dessert?
You don't need much, just some ice cream and a lot of imagination!

You Need:
  • One to Three kinds of Ice Cream (Recommended: Chocolate Ice Cream, Vanilla Ice Cream, Strawberry Ice Cream)
  • One to Three kinds of Dessert Sauces (Recommended: Pineapple Sauce, Strawberries, Chocolate Sauce)
  • One Banana 
  • Whipped Cream 
  • Sprinkles or Chopped Nuts 
  • Cherries 

Directions:
  1. Place three scoops of your ice cream in a line in your deep dish. 
  2. Cut the banana in half and squish against the scoops of ice cream. 
  3. Dribble on the different sauces to your liking 
  4. Whipped topping the whole thing.
  5. Sprinkle on the sprinkles or the nuts. 
  6. Add a cherry & spoon... 
  7. And enjoy!

Air Pop Popcorn!

Apparently,  most of you REALLY LIKE FOOD. So, for those that REALLY LIKE FOOD this one is for you! :D
Last night I went to the movies and saw The Hobbit with my family. I think it was fabulous movie, but my sibling says that there was a few parts added here and there that really weren't there in the first place. My sibling also said "Quit poking me every five seconds asking me if this was in the book or not!" Touchy!
Anyways, I got home and had a craving for popcorn. Not the day old stuff from the theatre (I only know this because I worked there for a summer) but really good scrumptious popcorn!
So, here is the following recipe for the best popcorn for the microwave without all the added junk in it.

Directions:
1. Get a brown paper bag.
2. Pour 1/4 cup off unpopped popcorn kernels into it.
3. Roll the bag over twice
4. Place in microwave for 2 minutes
* If the popping is finished before the 2 minutes TAKE OUT before it burns!
5. Pour into a large bowl and enjoy!

If you would like to add butter, or salt, the best time to do so is when the popcorn is warm!

Italian Meatballs

Who doesn't love a meat ball sub? I can't think of anyone! Well, I know that I have posted how to make a mean meatball sandwich, but how about Italian meatballs? *Nom*

I would post a picture of the Italian Meatballs, but my internet connection is being a bit suckish, so you'll just have to make do by making them yourself! ☺

Ingrediants:
14 oz of Chili Sauce
12 oz of Jellied Cranberry Sauce
1 bag of Italian Meatballs
1 bag of Rolls
Shredded Cheese (Your choice!)

Directions:

- Combine the Chili Sauce and the Jellied Cranberry Sauce in a large pot on low heat. Simmer for about 20 minutes until the mixture is pretty much lump-less.
- Add in the meatballs. If you meatballs are frozen, it might be a good idea to put them in the microwave for about a minute or so just to melt off the ice. If you didn't no problem, they'll cook the same in the pot.
- Let everything simmer for another 10 minutes, Do Not Boil.
- Remove from the pot and serve! Not bad right?

Best served with vegetables. Enjoy! ☺

Frozen Foods

Now, I'm a sucker for new foods, unless if has an odd smell, but typically I'll try anything. Now when someone suggested to me to try frozen grapes, I kind of laughed and said "Really?"
She goes, "Really! Try it!"
So, I did!


All you need a bunch of grapes, a freezable cup or bowl and the fridge. That's it! Just place the grapes into the bowl, place into the freezer for up to 4 hours (I find over night tastes best for a morning snack) and enjoy! It's a very good snack for warm days, but I think I'm going to be the type of person that is going to enjoy them all year!

Now another frozen treat that I enjoy most of the year (except for on those really, really cold days) is iced coffee.  I enjoy Dunkin Donuts at thier best, but sometimes I don't have time in the morning to go all the way to their station before breakfast. So instead, I improvise. I'll make about two cups of coffee the night before and when it's cold, or at least room temperature, pour it all into ice cube trays and freeze over night. Then, in the morning, I'll make a instant coffee and while that's cooking, I'll put as many ice cubes into my cup as I can. When the coffee is done I'll pour in the instant coffee and tada! Homemade iced coffee!

Pumpkin Seeds!

I think that fall is never ocmplete without pumpkin seeds, friends and laughter!


And we made our very own in our little dorm kitchen all by ourselves!

Steps

1. Carve out the pumpkin, but be sure to seperate the seeds from the gunk from the pumpkin.
* Preheat oven to 400 degrees
2. Rinse the seeds in a colondur and be sure ALL the gunk is seperated from the seeds!
3. Place a large sheet of tinfoil on a baking sheet and spread one tablespoon of oil over the pan.
4. Spread the seeds over the pan and place in the oven (which should be ready by now!)
5. Place the seeds on the tray into the oven for 25 minutes and check on the seeds every 5 minutes.
* After the first 10 minutes flip the seeds over!
6. After 20 - 25 minutes, or at least when the seeds are golden brown, take the seeds out again!
7. Sprinkle salt over the seeds and wait a few more minutes.... then....
8. ENJOY!

Jello Worms!

 
Well Ladies and Gentelmen, It's almost Halloween time! And my dorm is thinking of throwing something of a Halloween party and why shouldn't I bring something new and interesting!
 
(I'm going to try this as soon as my test is over and I'll let you know how it went!)
 
Squirmy Jelly Worms
 
You need:
1 package of Jello
Enough Hot water to follow the directions on the Jello package
1 package of plastic straws
2 rubber bands
1 tall strong glas or tall sturdy bowl
 
Directions:
1. Make the Jello! (Follow the Instructions on the Box!)
2. Bind 20-30 straws together using the rubber bands     
and place them standing up in the bowl.
3. Pour in Jello CAREFULLY! Make sure that the straws
   are FLAT against the bowl or it won't work!                
4. Place Jello in the fridge and wait a few hours                
 5. When you're taking out the Jello run a little warm water
to help loosen it up and tada!

'Poisoned' Apple Pie


Now doesn't that just look DELICIOUS?? I picked this recipe up in Lyon, France and it turned out so good that there wasn't a single piece left! Now that's a good pie!

Need:
- 6 Yellow Apples
- 1 Pie Crust
- Cinnamon
- Butter
- Brown Sugar

Prepare:
1. Place the pie crust into the pie pan and smooth out.
2. Slice the apples into six slices each, the cut the slices into smaller slices ... smaller than bite size!
3. Place all the apple slices into the pie dish
4. Mix in the butter, Cinnamon and brown sugar (no actual measured amounts, use your best judgement!)
5. Bake for an hour BUT after about 10-15 minutes turn the pie ... and the best part is there is no need for a top!

Rainbow Cupcakes!

Excited for summer? So am I! It's time for parties and picnics and finding ways to impress your host!
This is the second time I tried this, the first time I didn't get the chance to have a hand in i, but I did most of this by myself!

To do rainbow cupcakes you need:
- Cupcake mix (and all ingrediants needed for the cupcake mix) Prepare before hand!
- Cupcake wrappers
- 4 - 5 food coloring choices


1. Divide the cupcake mix into 5 containers


2. Add food coloring to the seperate containers


3. Use a teaspoon to place one scoop of each color into the wrappers
     *If you are doing red white & blue cupcakes for the holidays, drop in two of each color



4. Bake the cupcakes exactly as you had prepared them. They will come out similar to this! The different colors will make a neat pattern... almost too good to eat!

SLIME!!!

Slime is easy to make. It only takes a few ingredients and a few minutes to make a batch. Follow these step-by-step written instructions or watch the video to see how to make slime. To get started, gather the following materials:
  • water
  • white glue (like Elmer's™)
  • borax
  • food coloring (unless you want uncolored white slime) 
If you're making it with a small crowd, this is a good recipe. Good luck!

1. Mix 1 tsp of borax in 1c of water. Stir until the borax is completely dissolved. (May take a few minutes)
2. In another container, or another person, mix 1/2 c of white glue with 1/2 cup of water. Here you can add the food coloring!
3. When everything is mixed completely in the separate containers, mix the two liquids. It's already going to look weird, goopy and fun to play with! I would say mix this in a plastic zip lock bag, it makes it more fun to squish it with your hands and watch it mix!
4. Mix mix mix mix! When you start to see water/food coloring, take out the mixture and add it to another zip lock bag. Keep squishing!
5. When it is in the separate bag, leave it out on the counter for about half an hour. You can squish it every so often. After, take it out and play with it! Have fun!

    Colby's Eggs

    This weekend we had a lovely dinner party with a few friends, and one of them brough hard boiled eggs! How lovely! I love hardboiled eggs, if the rest of the family doesn't really. I asked Colby if he would share his recipe and this is what he gave me:

    Colby's Hard boiled Eggs
    *For one dozon eggs

    1. Hard boil the eggs
    2. Cut the eggs in half and take out the yolks
    3. In a large bowl, mix 1 cup of mayonaise
                                         1/2 hand ful of chedder cheese
                                         4 strips of bacon (cut into small pieces)
    4. Add one teaspoon of mixture to hollowed hole of each egg
    5. Serve and enjoy!

    I wish I took a picture of his eggs, they were quite lovely. In the meantime, enjoy this picture. ☺

    Fruit Salad

    Hello Summer! Need a few ideas for your friends and family to nom on? Well, here's an answer!

    You need:
    1/2 Cantalope                                     1 lg. Mixing Bowl
    1/2 Honeydew                                    1 super dooper knife
    1    Whole Watermelon                      1/2 inch ice cream scooper
    11 oz. canned Mandarin Oranges      
    4     Strawberries

    Directions:

    1. If you haven't already, cut the Cantalope, Honeydew and Watermelon in half. Set the Halves aside for now (or to nom on while you're watching your late shows!)
    2. Using the ice cream scooper scoop out the fruit from the skin and place into the large bowl to mix in everything. You can keep the empty skins of the honeydew and the cantalope to fill with the extra watermelon, but thats only if you haven't eaten the extra watermelon yet!
    3. In the mixing bowl, add the scooped watermelon, honeydew and cantalope. Also mix in the mandarain oranges and if you would like more strawberries, by all means add more CUT strawberries!
     4. Oh right, major point here. DRAIN EVERYTHING BEFORE MIXING!
    5. Last but not least, add all the mixed fruites into the carved out watermelon that you kept aside and didn't throw out! As an added touch, leave four strawberries in a pattern on the top.

    Buttercream Icing

    Working on a surprise party for someone? Or just in the mood for making a cake? Then try this recipe that I found in the kitchen!


    Yum! Doesn't it look just absolutely YUMMY??? Let me assure you, it really is that delicious. The rest of the family thought so too! Except... they didn't see this mess...


    Or this mess...


    But the end result is this delicious icing for a cake in a box! The recipe is as follows... good luck!

    Buttercreme Icing:

    1/2 C Shortning
    1/2 C Margarine
    1     t  Vanilla
    4    C Sugar (Confectioners)
    2    T Milk
    (If want Choclate Buttercreme Icing) 3/4 C Cocoa + 1-2 T milk )

    1) Creme the Shortning and the margarine together with a beater.
    2) Add in the vanilla and beat throughly
    3) Add the sugar slowly at medium speed
    4) Add Milk and beat all ingrediants until there are no lumps.
    5) Add in chocolate or food coloring

    If you do have extra icing (like I did) put the remaining icing in a air tight container and freeze it. The icing lasts longer and it wont get all moldy! ♥

    Jello Orange Slices

    This was recommended to my by a friend, and I thought I would like to try it with my kiddos. Please thank her, Thanks! 



    Nicole's Jello Orange Slices:
  • Slice oranges in half. Scoop out all the orange and flesh. Save the peels in a bowl form.

  • In a bowl please follow directions of making Jello by using the package.

  • Pour liquid Jello into orange halves. Refrigerate for approximately 4 hours, or until firm.

  • To serve, slice each half into 3 wedges.

  • Enjoy! ☺
